iPhones: Tap the camera icon to adjust ISO, shutter speed (S), and exposure compensation (EV), and change the white balance in settings after disabling the Auto mode.

Android phones: You can adjust white balance (AWB) in the setting“…" but cannot manually adjust ISO and shutter speed (S).
